Ratatouille
Embark on a culinary journey to the sun-kissed countryside of Provence with a classic French dish – ratatouille. Ingredients:
- 1 large eggplant, diced
- 2 medium zucchini, diced
- 2 bell peppers (red, yellow, or orange), diced
- 2 large tomatoes, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon dried rosemary
- Salt and pepper, to taste
- Fresh basil leaves, torn, for garnish
Instructions:
1. Heat the olive oil in a large skillet or Dutch oven over medium heat.
2. Add the diced onion to the skillet and cook until softened and translucent, about 5 minutes.
3. Add the minced garlic to the skillet and cook for an additional 1-2 minutes, until fragrant.
4. Stir in the diced eggplant, zucchini, and bell peppers, and cook for 8-10 minutes, or until the vegetables start to soften.
5. Add the diced tomatoes to the skillet, along with the dried thyme, oregano, rosemary, salt, and pepper. Stir to combine.
6. Cover the skillet and simmer the ratatouille over medium-low heat for 20-25 minutes, stirring occasionally, until all the vegetables are tender and the flavours have melded together.
7. Taste and adjust the seasoning with salt and pepper if needed.
8. Once the ratatouille is cooked to your liking, remove it from the heat and let it cool slightly.
9. Garnish the ratatouille with torn fresh basil leaves just before serving.
10. Serve the ratatouille warm as a side dish, a main course, or as a topping for crusty bread. Enjoy the rich flavours and rustic charm of this classic French dish!
