Lemon Garlic Roasted Chicken

Elevate your dinner table with the vibrant flavours of Lemon Garlic Roasted Chicken, a dish that marries the zesty tang of lemon with the aromatic richness of garlic for a culinary experience that's both sophisticated and comforting. This recipe transforms simple ingredients into a mouthwatering main course that's perfect for any occasion, from casual weeknight dinners to special gatherings with loved ones. Ingredients:

- 1 whole chicken (about 1.5kg)
- 2 lemons, divided
- 6 cloves garlic, minced
- 3 tablespoons olive oil
- 2 teaspoons dried thyme
- 1 teaspoon dried rosemary
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish (optional)

Instructions:

1. Preheat your oven to 200°C (400°F/Gas Mark 6).

2. Rinse the whole chicken under cold water and pat it dry with paper towels. Place the chicken on a clean cutting board.

3. Cut one lemon into slices and set them aside. Juice the second lemon and set the juice aside.

4. In a small bowl, combine the minced garlic, olive oil, dried thyme, dried rosemary, and lemon juice. Mix well to create the marinade.

5. Using your fingers or a basting brush, generously coat the entire surface of the chicken with the marinade, making sure to get it into all the nooks and crannies.

6. Season the chicken generously with salt and black pepper, both inside and out.

7. Stuff the cavity of the chicken with the lemon slices that were set aside earlier.

8. Tie the legs of the chicken together with kitchen twine to help it cook evenly.

9. Place the chicken in a roasting pan or ovenproof dish, breast side up.

10. Roast the chicken in the preheated oven for 1 to 1.5 hours, or until the skin is golden brown and crispy, and the internal temperature reaches 75°C (165°F) when measured with a meat thermometer inserted into the thickest part of the thigh.

11. Once the chicken is cooked through, remove it from the oven and let it rest for 10-15 minutes before carving.

12. Garnish the Lemon Garlic Roasted Chicken with freshly chopped parsley, if desired, before serving.

13. Carve the chicken into serving pieces and enjoy the succulent meat infused with the bright flavours of lemon and garlic.
