Homemade Chicken Tikka Masala

Indulge in the rich and aromatic flavours of Homemade Chicken Tikka Masala, a beloved dish that's a staple of Indian cuisine. This creamy and comforting curry, featuring tender pieces of chicken in a spiced tomato-based sauce, is sure to tantalize your taste buds and transport you to the bustling streets of India. With a few simple ingredients and a bit of patience, you can create this restaurant-quality dish in the comfort of your own kitchen.

Ingredients:

For the Chicken Marinade:
- 500g boneless, skinless chicken thighs, cut into bite-sized pieces
- 120g plain yogurt
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- Salt and pepper, to taste

For the Masala Sauce:
- 2 tablespoons ghee or vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 400g canned diced tomatoes
- 200ml heavy cream
- Salt and pepper, to taste
- Fresh coriander leaves, chopped, for garnish

Instructions:

1. In a large mixing bowl, combine the yogurt, lemon juice, minced garlic, grated ginger, ground cumin, ground coriander, ground turmeric, paprika, cayenne pepper, salt, and pepper. Mix well to form a marinade.

2. Add the bite-sized chicken pieces to the marinade and toss until evenly coated. Cover and refrigerate for at least 1 hour, or preferably overnight, to allow the flavours to meld.

3. Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken pieces onto skewers and grill for 5-6 minutes on each side, or until cooked through and slightly charred. Remove from heat and set aside.

4. In a large skillet or saucepan, heat the ghee or vegetable oil over medium heat. Add the finely chopped onion and cook until soft and translucent, about 5 minutes.

5. Add the minced garlic and grated ginger to the skillet and cook for another 1-2 minutes, until fragrant.

6. Stir in the ground cumin, ground coriander, garam masala, ground turmeric, paprika, and cayenne pepper. Cook for 1 minute, stirring constantly, to toast the spices and release their aroma.

7. Add the canned diced tomatoes to the skillet, along with any juices, and bring to a simmer. Cook for 10-15 minutes, stirring occasionally, until the tomatoes break down and the sauce thickens slightly.

8. Stir in the grilled chicken pieces and any accumulated juices, along with the heavy cream. Simmer for another 5-10 minutes, until the chicken is heated through and the sauce reaches your desired consistency.

9. Season the Chicken Tikka Masala with salt and pepper to taste. If desired, adjust the seasoning with additional spices or a squeeze of lemon juice for brightness.

10. Garnish the Chicken Tikka Masala with freshly chopped coriander leaves before serving.

11. Serve the Homemade Chicken Tikka Masala hot, accompanied by fluffy basmati rice, naan bread, or your favourite Indian flatbread.
