Greek Salad with Grilled Chicken

Experience the vibrant flavours of the Mediterranean with this refreshing and wholesome Greek Salad with Grilled Chicken. Bursting with crisp vegetables, tangy olives, creamy feta cheese, and succulent grilled chicken, this salad is a delightful combination of textures and tastes that will transport your senses to the shores of Greece.

Ingredients:

For the Grilled Chicken:
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper, to taste

For the Greek Salad:
- 4 cups mixed salad greens (such as romaine lettuce, spinach, and arugula)
- 1 cucumber, diced
- 1 bell pepper (red or yellow), diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted
- 1/2 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley

For the Greek Salad Dressing:
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1 clove garlic, minced
- Salt and pepper, to taste

Instructions:

1. In a bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper to create the marinade for the grilled chicken.

2. Place the chicken breasts in a shallow dish or resealable plastic bag, and pour the marinade over them. Ensure the chicken is well coated. Cover or seal the dish/bag and marinate in the refrigerator for at least 30 minutes, or ideally up to 2 hours.

3. Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade, shaking off any excess, and discard the remaining marinade.

4. Grill the chicken breasts for 6-8 minutes per side, or until they are cooked through and have beautiful grill marks. Remove from the grill and let them rest for a few minutes before slicing.

5. While the chicken is grilling, prepare the Greek Salad. In a large salad bowl, combine the mixed salad greens, diced cucumber, diced bell pepper, halved cherry tomatoes, thinly sliced red onion, pitted Kalamata olives, crumbled feta cheese, and chopped fresh parsley.

6. In a separate small bowl, whisk together the ingredients for the Greek Salad Dressing: extra virgin olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, salt, and pepper.

7. Drizzle the Greek Salad Dressing over the salad ingredients and toss gently to coat everything evenly.

8. Once the grilled chicken has rested, slice it thinly.

9. Divide the Greek Salad among serving plates or bowls. Top each portion with slices of grilled chicken.

10. Serve the Greek Salad with Grilled Chicken immediately, and enjoy the fresh and vibrant flavours of the Mediterranean.
