Classic Roast Beef with Yorkshire Pudding
Experience the timeless charm of a Classic Roast Beef with Yorkshire Pudding, a beloved British dish that embodies comfort and tradition. Ingredients:
For the Roast Beef:
- 1.5kg beef joint (such as sirloin or ribeye), preferably with some fat for added richness
- Salt and freshly ground black pepper
- Olive oil
For the Yorkshire Pudding:
- 140g plain flour
- 4 large eggs
- 200ml milk
- Sunflower oil or beef drippings, for greasing
Instructions:
1. Begin by preheating your oven to 220°C (425°F) for both the roast beef and Yorkshire pudding.
2. Prepare the beef joint by patting it dry with paper towels and seasoning generously with salt and freshly ground black pepper.
3. Heat a small amount of olive oil in a large roasting pan over medium-high heat on the stovetop. Once hot, add the beef joint and sear on all sides until nicely browned. This helps to lock in the juices and enhance the flavour of the meat.
4. Transfer the seared beef joint to the preheated oven and roast for approximately 20 minutes per 500g for medium-rare, adjusting the cooking time according to your preferred level of doneness.
5. While the beef is roasting, prepare the Yorkshire pudding batter. In a mixing bowl, sift the plain flour and create a well in the centre. Crack the eggs into the well and gradually whisk in the milk until a smooth batter forms. Allow the batter to rest for at least 30 minutes at room temperature.
6. Once the beef is cooked to your liking, remove it from the oven and transfer it to a cutting board to rest. Cover loosely with foil and let it rest for about 15-20 minutes before carving.
7. While the beef is resting, increase the oven temperature to 230°C (450°F) for the Yorkshire pudding.
8. Pour a small amount of sunflower oil or beef drippings into each cup of a muffin tin or a Yorkshire pudding tin, and place it in the preheated oven for about 5 minutes to heat up the oil.
9. Once the oil is hot, carefully pour the Yorkshire pudding batter into the hot oil, filling each cup halfway.
10. Return the tin to the oven and bake the Yorkshire puddings for approximately 20-25 minutes, or until they are risen and golden brown.
11. Remove the Yorkshire puddings from the oven and transfer them to a wire rack to cool slightly.
12. Carve the roast beef into thick slices and serve with the golden Yorkshire puddings, accompanied by traditional side dishes such as roast potatoes, vegetables, and gravy.
