Classic Chicken Caesar Salad

Step into the world of classic flavours with Chicken Caesar Salad, a beloved dish that has stood the test of time. This iconic salad combines crisp romaine lettuce, tender grilled chicken, crunchy croutons, and tangy Caesar dressing, creating a harmony of textures and flavours that is both satisfying and delicious. Whether enjoyed as a light lunch, a refreshing dinner, or a crowd-pleasing appetizer, Chicken Caesar Salad never fails to impress. Ingredients:

For the Grilled Chicken:
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and black pepper, to taste

For the Caesar Dressing:
- 1/2 cup mayonnaise
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and black pepper, to taste

For the Salad:
- 1 large head of romaine lettuce, washed and chopped
- 1 cup croutons
- 1/4 cup grated Parmesan cheese
- Lemon wedges, for serving

Instructions:

1. Preheat your grill or grill pan to medium-high heat.

2. In a small bowl, whisk together the olive oil, garlic powder, dried oregano, salt, and black pepper to create a marinade for the chicken.

3. Place the chicken breasts in a shallow dish and pour the marinade over them, turning to coat evenly. Let the chicken marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

4. While the chicken is marinating, prepare the Caesar dressing. In a mixing bowl, combine the mayonnaise, grated Parmesan cheese, lemon juice, Dijon mustard, minced garlic, salt, and black pepper. Whisk until smooth and creamy. Adjust seasoning to taste, if needed.

5. Grill the marinated chicken breasts for 6-8 minutes per side, or until cooked through and no longer pink in the centre. Remove from the grill and let them rest for a few minutes before slicing.

6. In a large salad bowl, combine the chopped romaine lettuce, croutons, and grated Parmesan cheese.

7. Add the sliced grilled chicken to the salad bowl.

8. Drizzle the Caesar dressing over the salad, tossing gently to coat all the ingredients evenly.

9. Divide the Chicken Caesar Salad among serving plates or bowls.

10. Garnish with additional grated Parmesan cheese and lemon wedges, if desired.

11. Serve immediately and enjoy the classic combination of flavours in this timeless salad.
