A Comforting Classic for Chilly Evenings:

Cheesy Tomato Pasta Bake

As the nights draw in and the temperature drops, there's nothing quite like a hearty and comforting meal to warm you from the inside out. One dish that never fails to satisfy on a chilly evening is a classic Cheesy Tomato Pasta Bake. Bursting with rich tomato flavours and oozing with melted cheese, this dish is a favourite among families and friends alike.

Ingredients:

- 300g penne pasta
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 400g tin of chopped tomatoes
- 2 tablespoons tomato puree
- 1 teaspoon dried mixed herbs
- Salt and black pepper, to taste
- 150g grated cheddar cheese
- Fresh basil leaves, to garnish (optional)

Instructions:

1. Preheat your oven to 200°C (180°C fan/ gas mark 6). Grease a baking dish with a little olive oil and set aside.

2. Cook the penne pasta according to the package instructions until al dente. Drain and set aside.

3. In a large frying pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and cook until softened and fragrant, about 3-4 minutes.

4. Pour in the chopped tomatoes and tomato puree, stirring to combine. Add the dried mixed herbs and season with salt and black pepper to taste. Allow the sauce to simmer for 5-7 minutes, until slightly thickened.

5. Once the sauce has thickened, add the cooked penne pasta to the pan, stirring until well coated in the tomato sauce.

6. Transfer the pasta and sauce mixture to the greased baking dish, spreading it out evenly. Sprinkle the grated cheddar cheese over the top, ensuring that the pasta is well covered.

7. Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbling and the edges of the pasta are golden brown.

8. Once baked, remove the pasta bake from the oven and allow it to cool slightly before serving. Garnish with fresh basil leaves, if desired, for a burst of flavour and colour.

9. Serve the Cheesy Tomato Pasta Bake hot, with a side salad or garlic bread for a complete and satisfying meal.
