Beef Tacos with Homemade Guacamole

Get ready to spice up your August evenings with a mouthwatering dish that's bursting with flavour and freshness – Beef Tacos with Homemade Guacamole. This Mexican-inspired feast combines juicy seasoned beef, crisp taco shells, and creamy homemade guacamole for a fiesta on your plate that will delight your taste buds.

Ingredients:

For the Beef Tacos:
- 500g lean ground beef
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
- 8-10 small taco shells or tortillas
- Optional toppings: shredded lettuce, diced tomatoes, grated cheese, sour cream, hot sauce

For the Homemade Guacamole:
- 2 ripe avocados, peeled and pitted
- 1 small tomato, diced
- 1/4 cup red onion, finely chopped
- 1 clove garlic, minced
- Juice of 1 lime
- 2 tablespoons chopped fresh coriander (cilantro)
- Salt and pepper, to taste

Instructions:

1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 2-3 minutes.

2. Add the ground beef to the skillet, breaking it up with a spoon. Cook, stirring occasionally, until the beef is browned and cooked through, about 5-7 minutes.

3. Stir in the chili powder, ground cumin, paprika, dried oregano, salt, and pepper, mixing well to coat the beef evenly with the spices. Cook for an additional 2-3 minutes to allow the flavours to meld together. Remove from heat and set aside.

4. While the beef is cooking, prepare the homemade guacamole. In a mixing bowl, mash the ripe avocados with a fork until smooth, but still slightly chunky.

5. Add the diced tomato, chopped red onion, minced garlic, lime juice, and chopped fresh coriander to the mashed avocado. Season with salt and pepper to taste, and stir until well combined. Adjust seasoning if necessary.

6. Warm the taco shells or tortillas according to package instructions.

7. To assemble the beef tacos, spoon the cooked seasoned beef into the warm taco shells or tortillas. Top with a generous spoonful of homemade guacamole and any desired toppings such as shredded lettuce, diced tomatoes, grated cheese, sour cream, or hot sauce.

8. Serve the Beef Tacos with Homemade Guacamole immediately, allowing everyone to customize their tacos with their favourite toppings.
